Ingredients
tomatoes
olive oil
salt and pepper
herbs (optional)
Instructions
Preheat your oven to 200° F or the lowest setting. Wash the tomatoes and remove the stems.
Slice the tomatoes in half. Drizzle olive oil over a baking sheet and spread to cover the entire surface evenly. Place the tomatoes, cut side up, on the baking sheet, and sprinkle with salt and pepper and drizzle with olive oil. You can add other herbs if you like. Bake the tomatoes in the oven for 2-8 hours or until dry, soft and pliable. The baking time will depend on the type of tomatoes, oven temperature and your preference. I baked my cherry tomatoes for 2 ½ hours and the larger tomatoes for 3 hours at 275° F. These tomatoes can be kept in the fridge for short-term storage; freeze for long-term storage.

8 cups vegetable stock
1 lemon, squeezed
1/2 cup dry  pasta (optional)
3 oz parmesan cheese, grated
2 cups kale, chopped

Immerse the beans in cold water, and soak overnight for at least 12 hours. Rinse and set to the side.
In a large soup pot, on low-medium heat, fry the onion and garlic in olive oil until translucent. Add the potato and continue to fry for another minute. Add the vegetable stock, juice from one lemon, and beans and simmer for 40 minutes or until the beans are soft.
Add the pasta (which is optional) and parmesan cheese, and continue to simmer until the pasta is al dente, approximately 10 minutes. Add the kale and simmer until tender, and the pasta soft. INGREDIENTS

  • 3 ripe avocados, seeded, peeled
  • juice of half a lime
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup diced tomatoes
  • ½ cup diced onion
  • 2 tablespoons chopped fresh cilantro
  • optional (for spicy version): 1 jalapeño, minced
INSTRUCTIONS

  1. In a large bowl, mash together avocados, lime juice, salt and pepper. Add remaining ingredients; stir to combine. Salt and pepper to taste.
  2. Serve right away or store covered refrigerated until ready to serve.

Ingredients
·      12 Oz/340 grams/2 small-medium Zucchini (it should yield 2 cups tightly).
·      1/4 cup grated Carrot
·      1/2 cup (abt 1 small potato) boiled and mashed Potato
·      1/4 cup Whole Wheat Pastry Flour
·      1/4 tsp Baking Powder
·      1/4 tsp dried Thyme (optional)
·      Salt and Pepper to taste
Instructions:
1.  Grate the Zucchini. Use the large hole.
2.  Place it in a colander and 1 tsp Salt to it. Toss to combine and set aside for at least 30 minutes.
3.  Squeeze the water out of zucchini. You can use your hands or use a cheesecloth.
4.  Add them along with thyme, potatoes and carrots in a bowl. You can at this point do a taste test to see if you want more salt. Season accordingly.
5.  In another bowl, mix the flour and baking powder until combined.
6.  Add it to the vegetable mixture.
7.  Mix until well combined.
8.  Make small (lime sized) balls.
9.  Form into patties. Repeat for rest of them. At this point you can also refrigerate these in the fridge (for about 20-30 min) which will help to hold them up well while frying. It also helps to avoid oil retention. It’s not strictly necessary to do this.
10.  Add 1-2 tbsp of oil to your Cast iron pan (or as desired to coat the bottom of a non stick skillet. Note that regular non stick will require less amount of oil) . When hot, add the patties.
11.Cook them until golden-reddish brown on both the sides. Takes around 5-6 minutes each side.
12. Serve hot with ketchup / Chilli sauce/ Yogurt or sour cream.

Ingredients
  • 2 tablespoons olive oil
  • 1 large sweet white onion, finely chopped
  • 3 large garlic cloves, minced
  • 10 oz mushrooms, sliced
  • salt and pepper
  • 1 cup rice, uncooked
  • 2 cups whole milk
  • water, as needed
  • 1/4 teaspoon Italian seasoning
  • 1 cup fresh Parmesan cheese wedge, finely grated
  • salt and pepper
Instructions
  1. Heat olive oil in a large skillet over medium-high heat. Saute chopped onion and garlic in the olive oil until onion is tender. Add sliced mushrooms, sprinkle with a little bit of salt, and continue cooking on medium heat, constantly stirring until mushrooms are soft and lightly browned - no more than 5 minutes.
  2. Add 1 cup of uncooked rice and 2 cups of milk to the skillet, bring it to boil, then immediately reduce to simmer. Add Italian seasoning and mix well. Cover the skillet with the lid. Let the mushrooms, rice and milk simmer until liquid is absorbed. Add water if more liquid is necessary for the rice. Simmer the rice mixture (and add more water if necessary) until rice acquires the desired consistency. When rice is done, stir in shredded Parmesan cheese and remove from heat. Season with more salt and pepper.

6 servings

Ingredients

1/3 cup olive oil
1 tablespoon dried italian seasoning
2 tsp sea salt
1/2 tsp crushed red pepper flakes
1/2 tsp freshly ground pepper
3 cloves garlic, minced
1.5 lb tomatoes, cored and sliced in half
2 portabello mushroom caps, diced to 1/2 inch
2 boneless, skinless chicken breasts
1 tsp seasoning salt
1 package linguine pasta
1 tablespoon table salt
1/4 cup parmesan cheese, shredded
1/4 cup torn basil leaves

Instructions

1. Preheat oven to 400F.
2. Combine first 6 ingredients in bowl and mix to combine.
3. Spray a large baking dish with cooking spray (or line it with foil) and arrange tomatoes cut side up along with portobellos. Drizzle with juices from bowl and bake for 45 minutes or until tomatoes begin to brown and release juices. Set aside to cool.
4. Meanwhile drizzle chicken breasts lightly and season with seasoning salt. Place in oven along side tomatoes for 40 minutes or until they begin to brown and are lightly firm to the touch. Set aside to cool.
5. Once tomatoes have cooled, crush half of them with a potato masher (or with your fingers), removing the skins of the crushed tomatoes. Allow other half of tomatoes to remain intact.
6. Shred chicken into bite sized pieces.
7. Bring large pot of water to a rolling boil. Add salt and pasta and cook according to package directions. Once al dente, scoop a cup of pasta water out of pot before straining.
8. Combine tomato sauce, chicken and pasta in large bowl adding pasta water if needed to moisten sauce. Top with parmesan and basil leaves. Enjoy!

INGREDIENTS

Mexican pizza
  • 8 large (7-inch) corn tortillas
  • 2 14.5-ounce cans organic refried black beans
  • 2 teaspoons paprika
  • 2 teaspoon ground cumin
  • ¼ teaspoon cayenne pepper
  • 1 14.5-ounce can whole black olives, sliced
  • 1 small red onion, diced
  • 3 medium tomatoes, chopped
  • 1 red bell pepper, finely chopped
  • ½ bunch green onions, sliced
  • ¾ cup shredded light monterey jack cheese
  • Avocado cream, to taste (recipe below)
  • Optional: salsa for serving.
Avocado cream
  • 1 ripe avocado
  • ½ cup greek yogurt
  • 2 tablespoons freshly squeezed lemon juice
  • 1 large clove garlic
  • 3 tablespoons extra virgin olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground pepper, or to taste.

INSTRUCTIONS

Mexican pizza
  1. Preheat the oven to 400° F with a pizza stone (or a large baking sheet) inside.
  2. Working in batches, lay as many tortillas out as possible on the pizza stone without overlapping and bake for 10 minutes, or until just crispy. Repeat until all tortillas are crispy.
  3. Meanwhile, heat the black beans, paprika, cumin, and cayenne over medium heat until smooth and pliable (it doesn't need to be heated all the way through, just enough to make it easy to spread).
  4. Divide the black beans among the crispy tortillas (about ⅓ cup per tortilla), and use a rubber spatula to spread the beans out evenly to the edges.
  5. Evenly the olives, red onion, tomatoes, and bell pepper among the tortillas.
  6. Sprinkle 1.5 tablespoons of shredded cheese over the top of each pizza.
  7. Bake the pizzas for about 10 minutes, or until the cheese is melted and bubbly and the toppings are cooked through. My pizza stone holds only 4 pizzas at a time, so work in batches if needed.
  8. Before serving, dollop or swirl avocado cream over the pizzas, to taste, and sprinkle sliced green onions on top. (To swirl it, I put the cream in a Ziploc bag and cut off the tip!).
  9. Optional: serve with a side of salsa.
Avocado cream
1.Toss all the ingredients in the food processor and blend until smooth. You'll likely have leftover cream that you can dip chips in too!

2-3 Servings
Ingredients
  • 1 lb boneless, skinless chicken breasts (about 2 medium), diced into bite size pieces
  • 1 Tbsp Extra Virgin Olive Oil
  • 1/4 cup Italian seasoned bread crumbs, white or wheat
  • 1/4 cup Panko bread crumbs
  • 3 Tbsp finely grated Parmesan cheese
  • 1/2 tsp dried parsley
  • Salt and freshly ground black pepper, to taste

In a separate mixing bowl whisk together Italian seasoned bread crumbs, Panko bread crumbs, Parmesan cheese, parsley, salt and pepper. Place chicken pieces into olive oil and toss chicken to evenly coat. Drop oil coated chicken, working with about 5 pieces at a time, into bread crumb mixture and coat each side (I kind of pressed the pieces into the bread crumbs to get more to stick). Place all of the coated chicken pieces onto oil coated baking sheet then sprinkle remaining bread crumb mixture over chicken pieces. Spray top of chicken pieces with olive oil spray. Bake in center of preheated oven for 10 minutes, then remove from oven, rotate chicken pieces to opposite side and bake an additional 5 minutes. Serve warm with ketchup, barbecue sauce or honey mustard for dipping, if desired.

INGREDIENTS
1/2 lb medium-large shrimp

1 teaspoon paprika
1/2 teaspoon fresh chopped parsley
1/2 teaspoon fresh chopped basil
1 teaspoon fresh lemon juice
3 tablespoons melted butter
1/2 teaspoon fresh black pepper
skewers

 INSTRUCTIONS
Start by melting butter in a small sauce pan and add garlic to it just long enough enough so it gets a little brown, maybe a minute or so. Transfer to a shallow dish. Place deveined and shelled shrimp on skewers and coat well with the butter garlic mix. Sprinkle coated shrimp skewers with paprika, parsley, basil and pepper.
Spray cooking spray on your Grill and preheat with the lid closed for at least 5 minutes. Use high setting if you have it. Just prior to placing shrimp skewers on grill, spritz them with some lemon juice. Not too much though.
Place shrimp skewers on grill, close lid, and let cook for approximately 3-5 minutes. Give the skewers a turn after 2 minutes to assure even grilling.
When shrimp are done it will be firm to the touch with an opaque color. Serve immediately.
