Ingredients

1 8 1/2-oz sheet puff pastry dough
3 tbsp softened butter
1/4 cup sugar
1 tsp cinnamon
1/4 cup miniature chocolate chips
1 egg, lightly beaten
6 oz chocolate candy coating
Crushed nuts for decorating,optional

Instruction

You need to start with puff pastry dough that is thawed but still cool, so take it out of the freezer and let it sit at room temperature for about 30 minutes before you’re going to need it. Preheat the oven to 400 degrees Fahrenheit. Cover two baking sheets with parchment paper. Dust your work surface with flour, then roll out the sheet of puff pastry until it is about 14 inches long by 10 inches tall. Cut the sheet in half lengthwise, so you’re left with two long rectangles. Spread the butter on one half of the pastry. Mix together 2 tablespoons of sugar and the cinnamon, and sprinkle it generously on the buttered dough. Spread the chocolate chips evenly on top of the cinnamon. Brush the second pastry half with the beaten egg. Carefully lift the dough and place it, egg side down, on top of the chocolate chips. Press along the edges, then lightly run a rolling pin on top of the dough to seal them together. Use a pizza cutter or a sharp knife to cut the dough crosswise into 24 strips that are each about 1/2-inch wide. Gently twist the strips several times, then set them on a parchment-covered baking sheet. Press the ends down so they stay flat on the sheet. Repeat until all of the dough is formed into twists. Brush the twists with the beaten egg, and sprinkle them with the remaining 2 tablespoons of sugar. Bake at 400 degrees for 10-12 minutes, until they’re puffed and golden brown throughout. Rotate the trays halfway through baking so they bake evenly. Let the twists cool completely at room temperature. Melt the chocolate candy coating, then dip each end in the coating. If you want to add chopped nuts, sprinkle them on top of the coating while it’s still wet.

INGREDIENTS
Crust:
  • 4 sheets of graham crackers
  • 1 tbsp. white sugar
  • 2 tbsp. butter, melted
Cheesecake:
  • 1 package (8 ounces) cream cheese, at room temperature
  • 1/2 cup white sugar
  • 1/2 tsp. vanilla extract
  • 2 tsp. flour
  • 1 egg, at room temperature
Cinnamon-sugar swirl
  • 1/2 cup butter, at room temperature
  • 1/2 cup brown sugar
  • 2 tsp, flour
  • 1 and 1/4 tsp. cinnamon
Cream cheese topping
  • 1 and 1/2 cup powdered sugar
  • 1/4 cup butter, at room temperature
  • 1/2 tsp. vanilla extract
  • 1 ounce cream cheese, at room temperature
INSTRUCTIONS
Crust
  1. Preheat the oven to 350 degrees F. Line a regular sized muffin tin with 8 liners and fill up half of the other empty spaces with water. This ensures even baking. Spray the liners with non-stick spray. (Cinnamon sugar mixture gets sticky!)
  2. In a food processor, pulse the graham crackers to crumbs. Stir in the sugar and melted butter. Press an even amount of graham cracker crust into the bottom of each muffin liner.
  3. Press down the crust with a milk cap or the backside of a tablespoon measuring spoon and set aside.
Cheesecake
  1. In a medium sized bowl, combine the softened cream cheese and white sugar. Beat until smooth and creamy. Add in the vanilla extract, flour, and a lightly beaten egg. Beat until combined.
Cinnamon-Sugar Swirl
  1. Combine the butter, brown sugar, flour, and cinnamon. Stir until completely combined.
  2. Spoon half of the cheesecake filling between the 8 cups. Then place about 1 teaspoon of the cinnamon sugar swirl on top of the cheesecake. Swirl the cinnamon sugar into the cheesecake with a toothpick.
  3. Top the rest of the cheesecake filling on top and then place drops of the cinnamon sugar swirl on top of the cheesecake.
  4. Swirl the cinnamon sugar (again) on top of the cheesecake with a toothpick (The cheesecakes should fill the muffin liners to the brim) and bake for 20-22 minutes. The centers will still jiggle a little bit, but the edges should be a very light brown.
  5. Remove from the oven and let cool at room temperature for 1 hour and then transfer to the fridge and let cool for at least 2 hours.
  6. The cheesecakes may have risen in the oven and will deflate quite a bit while cooling.
Cream cheese topping

  1. Cream together the powdered sugar, butter, vanilla extract and cream cheese.
  2. Spoon over the cooled cheesecakes and drizzle extra cream cheese frosting on top.

Ingredients:
Streusel
1/2 cup packed light brown sugar
1/2 cup cake flour
2 teaspoons cinnamon
1 teaspoon unsweetened cocoa powder
1/2 teaspoon salt
1/4 cup cold unsalted butter, cut into pieces

Cake
3 cups cake flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened to room temperature
1 1/2 cups sugr
3 large eggs
2 teaspoons vanilla extract
1 1/4 cups sour cream

Brown butter glaze
3 tablespoons unsalted butter
1 cup powdered sugar
2 teaspoons vanilla extract
1 tablespoon milk, if needed
pinch of salt

Instructions:
Preheat the oven to 350 degrees F. Butter and flour a 10-inch bundt cake pan and set aside. Butter and flour is key. Don't use cooking spray.

Streusel
Whisk together the sugar, flour, cinnamon, cocoa and salt. Add the butter pieces and using your hands, mix together the flour and butter until the flour is incorporated and in tiny pieces. It's okay if the mixture looks like sand.

Cake
In a small bowl, whisk together the flour, baking powder, soda and salt. In the bowl of your electric mixer, beat the butter on medium speed until creamy, then add the sugar and beat for 4 to 5 minutes on medium speed until fluffy, scraping down the sides if needed. Add the eggs one at a time, beating well for a minute or so after each addition. Add the vanilla and beat well. Beat in the sour cream, again scraping down the sides if needed.
Gradually add the dry ingredients with the mix on low speed. But until they are just incorporated. Spoon half of the batter into the greased bundt pan, then sprinkle with two thirds of the streusel. Add the remaining batter on top then finish off with the remaining streusel and swirl it into the batter with a knife. Bake until a wooden pick inserted into the cake comes out clean, about 45 to 55 minutes. My cake needed the full 55 and it was perfect. Remove the cake from the oven and allow to cool for 10 minutes. Invert the pan on a wire rack and allow the cake to cool completely. Don't attempt to move it or it will break apart.

Brown butter glaze
Add the butter to a small saucepan over medium heat. Whisk constantly until the butter begins to bubble and as soon as brown bits start to appear in the bottom of the pan, remove it from the heat. This will take about 5 minutes. Add the brown butter to a bowl and whisk in the sugar and vanilla extract. If the mixture is too thick to drizzle, whisk in the milk if needed. Pour over the cake once it has cooled and serve!

INGREDIENTS
(makes 6 small snow cones)
1/2 cup fresh squeezed orange juice
1/2 cup pomegranate juice
3/4 cup water
1/2 cup sugar
10 blackberries (more for garnishing)
2 cinnamon sticks (more for garnishing)
2 cups  Dark Wine

INSTRUCTIONS

In a large pot, combine the sugar and water and heat on low until melted.
Add in the pomegranate juice, orange juice blackberries and cinnamon sticks. Bring to a slight boil, then simmer on low for 15 mins. Let all of the ingredients infuse together until the blackberries lose their color.
Remove the blackberries, pour in the wine and simmer for another 5 minutes.
Remove the cinnamon sticks.
Pour into a deep container, such as a metal loaf pan.
Freeze overnight.
Use a fork to shave the sangria.
Serve in a snow cone cup with a blackberry and cinnamon stick.

Ingredients
Dough
3/4 cup whole milk
2 1/4 tsp instant yeast
1/4 cup unsalted butter, melted
2 tbs granulated sugar
1 egg
1/2 tsp salt
3 cups all-purpose flour
Filling
1/4 cup unsalted butter, melted
3/4 cup granulated sugar
3 tsp cinnamon
Vanilla Glaze
1/2 cup powdered sugar
1/2 tsp vanilla extract
1-4 tbs cream
Instructions
Heat milk until it reaches 105 degrees either on the stovetop or in the microwave. Stir in yeast packet and sugar and let it sit until the top becomes thick and frothy, about 3 minutes. Pour mixture into bowl of stand mixer and add melted butter, beaten egg and salt. Mix until combined. Add half of the flour and mix on low speed. Once combined, add the rest 1/4 cup at a time until the dough is sticky but workable and doesn't get stuck on your hands. Once dough is together, knead for another 5 minutes on low speed.
Work dough with your hands to form a ball. Grease a large bowl, or use the same bowl, and place dough in. Cover and set dough in a warm place until doubled in size, about 1 hour. I like to turn my oven on to 200 degrees, turn it off and place the bowl in there.
Once doubled in size, roll the dough out on a lightly floured surface into a large rectangle shape. Combine cinnamon and sugar in a small bowl. Brush on melted butter and cover in cinnamon sugar mixture. Cut dough length-wise into 5 long strips. Stack them on top of each other. Cut 6-7 sections across your stacks.
Grease a 9x5" loaf pan and loosely stagger your stacks in the pan. If they aren't snug to the edges of the pan, don't worry about it. It will bake up fine. If there is extra cinnamon sugar that spilled off while transferring the stacks into the pan, don't waste it! Sprinkle it on top of the dough in the pan. Cover dough with plastic wrap and allow to sit for 45 minutes to an hour until it doubles again in size.
Preheat oven to 350 degrees and bake for 22-27 minutes or until very lightly browned on top. Remove from oven, run a knife around the edges and allow to cool in pan for 20 minutes. During this time, whisk glaze ingredients together in a small bowl and set aside (add more cream/milk for desired consistency). Flip pan over and very carefully remove loaf and set on a large plate or platter. Drizzle glaze on top and serve!

18 doughnuts

Ingredients

  • 1 3/4 cup + 2 Tbsp all-purpose flour (measure 2 cups remove 2 Tbsp)
  • 1 3/4 tsp baking powder
  • 1 1/4 tsp salt
  • 3/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 3/4 cup granulated sugar
  • 3/4 cup packed light-brown sugar
  • 1/2 cup canola oil
  • 3 large eggs
  • 1 1/2 cups canned pumpkin puree
  • 1 tsp vanilla extract
Coating

  • 1/3 cup granulated sugar
  • 1 1/4 tsp ground cinnamon
Instructions

  • Preheat oven to 350 degrees. Butter 18 doughnut wells (3 6-hole pans).
  • In a mixing bowl whisk together flour, baking powder, salt, cinnamon, nutmeg and ginger for 20 seconds, set aside. In a separate large mixing bowl, whisk together granulated sugar and brown sugar until well combined (break up clumps of brown sugar with fingertips as necessary. You don't want any clumps). Add canola oil, eggs, pumpkin puree and vanilla extract and using an electric hand mixer, blend until mixture is well blended. Add dry ingredients to pumpkin mixture and mix with electric mixer until well combined. Spoon or pipe batter into doughnut wells, filling each about 3/4 full (a scant 1/4 cup in each).
  • Bake in preheated oven until toothpick inserted into center comes out clean, 13 - 16 minutes. Cool doughnuts slightly. Meanwhile in a large resealable bag shake together 1/3 cup sugar and 1 1/4 tsp cinnamon until well combined. Add one warm doughnut to bag at a time, seal and shake with sugar mixture to coat. Place on wire rack to cool completely. Store in an airtight container.


Ingredients

Crumbs
  • 1 cup + 2 Tbsp (160g) all-purpose flour
  • 1/3 cup (74g) packed light brown sugar
  • 1/3 cup (72g) granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup (4 oz) unsalted butter, melted
Cake
  • 1 cup (143g) all-purpose flour
  • 3/4 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 tsp salt
  • 5 Tbsp (2.5 oz) unsalted butter, softened
  • 1/2 cup (109g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup (2 oz) milk
  • 1/4 cup (2 oz) sour cream
Instructions

  • Preheat oven to 350 degrees. Butter an 8 by 8-inch baking dish then line with two sheets of parchment, butter parchment (alternately you can just butter and lightly flour the dish if you don't care to lift out the whole cake).
For the crumbs:

  • In a mixing bowl whisk together brown sugar, granulated sugar, cinnamon and salt. Pour in melted butter (use a spatula to scrape out any excess) and stir to combine. Slowly add flour while mixing with a wooden spoon or spatula, and mix until no streaks of flour remain. Set aside to rest while cake batter is prepared.
For the cake:

  • In a mixing bowl whisk together flour, baking powder, baking soda and salt for 20 seconds, set aside.
  • In the bowl of an electric stand mixer fitted with the paddle attachment, whip together butter and granulated sugar until pale and fluffy. Mix in egg and vanilla. In liquid measuring cup used to measure milk, whisk together sour cream with milk. Add in 1/3 of the flour mixture to the butter mixture and blend just until combined, then add 1/2 of the milk mixture and mix just until combined. Repeat process once more, then end by mixing in last 1/3 of the flour mixture until nearly combined. Scape down sides and bottom of bowl using a rubber spatula and fold batter to fully incorporate.
  • Pour batter into prepared baking dish and spread into an even layer. Break crumb mixture into pea size crumbs and drop evenly over batter. Bake in preheated oven until toothpick inserted into center comes out free of batter and cake doesn't sink when touched in center, about 32 - 35 minutes. Cool in cake pan 10 minutes, then using parchment overhang lift cake from pan and cool on a wire rack. Store in an airtight container.

3-4 servings

Ingredients:

salt and pepper to season the chicken
4 large skinless chicken breasts
2 onions, peeled and diced
3 garlic cloves, smashed (or chopped)
1 tbsp anchovy paste (or you can use anchovy fillets)
1x400g | 14oz can chopped tomatoes in tomato juice
3 bunches cherry tomatoes, on the vine (optional)
3 tbsp black pitted olives
3 tbsp mini capers
1 tbsp large capers (optional)
pinch ground cinnamon
2 tbsp chopped flat-leaf parsley
1 tbsp crushed chillies
olive oil to fry
splash sweet vermouth (optional)


Instructions:

1. Pat the chicken breasts dry with kitchen towel and season with salt and pepper. Heat 1 tbsp of olive oil in a large pan and then sear the chicken breasts on both sides until nicely coloured. Set aside.
2. Add a small splash of vermouth (or water) to the hot pan to deglaze – scrape any bits of chicken that may have stuck on the bottom. Lower the heat and add the garlic, anchovy paste and chopped onions. Cook until the onions are translucent and soft – 5-10 minutes.
3. Turn the heat up and add the chopped tomatoes and a pinch cinnamon. Fill the empty can with water and add to the pan. Stir in the the olives and capers and bring to the boil.
4. Lower the heat to a simmer and add the chicken breasts into the pan. Nestle the cherry tomatoes on the vine among them. Sprinkle with the crushed chillies.
5. Cover, and cook for 20 minutes. Take the lid off and cook for a further 10 minutes or until the chicken breasts are thoroughly cooked and sauce is slightly thickened.
6. Sprinkle with the chopped parsley and serve either with spaghetti (toss them in with the sauce) or with courgette (zucchini) noodles.

Add a little sugar if the tomatoes are not very sweet. Add a little lemon juice to the sauce if you prefer it sharper. The courgette noodles don't need any cooking – they will soften once covered with the hot sauce.

Ingredients

Cannoli cups:
  • 2 cups all-purpose flour, plus more for dusting work surface
  • 2 1/2 Tbsp granulated sugar
  • 1 tsp cocoa powder
  • 1/2 tsp cinnamon
  • 1 pinch nutmeg (optional)
  • 1/2 tsp salt
  • 1/4 cup butter, melted
  • 1 large egg white
  • 6 - 8 Tbsp apple juice or grape juice
  • 2 Tbsp white wine vinegar (red wine vinegar or plain white vinegar would be fine)
  • Vegetable oil cooking spray
Cannoli Filling
  • 12 oz whole milk Ricotta cheese, strained
  • 8 oz Mascarpone cheese
  • 1/2 cup powdered sugar (You can add 2 Tbsp more if you'd like it a little sweeter)
  • 1/3 cup mini semi-sweet chocolate chips
  • powdered sugar, for dusting (optional)
  • Optional toppings:
  • Melted chocolate, chopped pistachios, sprinkles, toasted sweetened coconut
Instructions:
For the cannoli cups:
  • Add flour, granulated sugar, cocoa powder, cinnamon, nutmeg and salt to a food processor and pulse until blended. Pour in melted butter and pulse until well combined then add egg white and pulse until blended. In a bowl combine juice and vinegar, with processor running slowly pour in juice mixture and pulse just until mixture begins to come together. Divide dough into two pieces, shape into balls and transfer to a resealable bag. Chill in refrigerator 30 minutes - 1 hour. Preheat oven to 400 degrees during last 10 minutes of refrigeration.
  • Meanwhile prepare filling. In a mixing bowl, using a rubber or silicone spatula, blend together Ricotta and Mascarpone cheese while running and pressing mixture along bottom of bowl to remove any lumps. Fold in powdered sugar. Cover and chill 30 minutes (or until ready to use).
  • Roll each chilled dough out on a lightly floured surface (dust top with flour too) into a 14-inch circle, to about an 1/8-inch thickeness. Cut into circles using a 2 1/2-inch round biscuit cutter. Transfer rounds to an ungreased mini muffin tin, pressing evenly into sides and bottom of muffin well. Spray tops evenly with vegetable oil spray. Bake in preheated oven 11 - 13 minutes until lightly golden. Remove from oven and transfer to a wire cooling rack to cool completely. Once cool dip tops in chocolate if desired then into coating if using (such as pistachios) and allow chocolate to set.
  • Remove cannoli filling from refrigerator, transfer to a piping bag fitted with a tip (or you can use a large resealable bag and cut the tip of the end). Pipe filling into cups and sprinkle with chocolate chips and dust with powdered sugar. For best results serve within 2 hours. Store in refrigerator.

INGREDIENTS:

3 apples, peeled, cored and thinly sliced or cubed 
1 teaspoon lemon juice
3 tablespoons sugar
1 tablespoon all-purpose flour
3/4 teaspoon ground cinnamon
1/4 cup dried cranberries
1/4 cup chopped walnuts, plus more for the top
1 egg
1 sheet of puff pastry, thawed

Glaze:
1/2 cup confectioners' sugar
2 teaspoons heavy cream or milk


INSTRUCTIONS

  1. Heat the oven to 375°F. Line a large baking sheet with parchment paper.
  2. Toss the apples with lemon juice then spirnkle the sugar, flour and cinnamon over them. Toss well. Add the cranberries and walnuts, toss again.
  3. Beat the egg with a tablespoon of water in a small bowl.
  4. Sprinkle flour on a work surface and unfold the pastry sheet. Flour a rolling pin and roll the puff pastry out to a 16 x 12 -inch rectangle.
  5. With the short side facing you spoon the apples onto the bottom half and leave a 1-inch border around the edges.
  6. Brush the border all the way around with egg.
  7. Roll the puff pastry up and place seam side down on the baking sheet. Press the edges together well and tuck them under.
  8. Brush the top with egg and cut slits in it for the steam to escape.
  9. Bake about 35 minutes or until golden brown all over. Let cool.
  10. In a small bowl whisk the confectioners sugar with the heavy cream until smooth. Drizzle over the strudel and sprinkle with a handful of chopped walnuts.
  11. Cut into slices or slabs with a serrated knife. Store leftovers tightly covered up to 3 - 4 days.

Serves: 32 bars

INGREDIENTS

 Caramel Sauce
3/4 cup butter
1 1/2 cups light brown sugar, firmly packed
2 tablespoons water
1/4 teaspoon salt
1-2 - 3/4 cup evaporated milk
1 tablespoon vanilla extract

Butterscotch Crust
2 cups flour
1 3.4 oz. instant butterscotch pudding mix
1/4 cup brown sugar
1 egg
1/2 cup butter, melted
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 cup pecans, chopped
1/3 cup toffee bits (bits of brickle)

Apples
4 Granny Smith apples, peeled and sliced very thin
1 tablespoon butter, melted
2 tablespoons brown sugar
1/2 teaspoon cinnamon


Cheesecake
2 (8 oz.) pkgs. cream cheese, softened
1/2 cup sugar
1/4 cup sour cream
1 egg
1 tablespoon lemon juice
1 teaspoon vanilla


Streusel
3/4 cup flour
1/2 cup brown sugar
1/2 cup quick-cooking oats
1/2 cup butter, chilled and cubed
1/2 cup pecans, chopped
1/2 cup toffee bits (bits of brickle)

INSTRUCTIONS
1. Caramel: Add butter, brown sugar, water, and salt to medium saucepan and heat over medium heat, stirring until butter melts. Bring to boil for 5 minutes (it will bubble a lot!), stirring occasionally. Remove from heat and stir in 1/2 cup evaporated milk and vanilla. Add additional evaporated milk to reach desired consistency. Set aside.

2. Crust: Line a 9x13 baking pan with parchment paper all the way up the sides and lightly spray with nonstick cooking spray. In a medium bowl, mix together crust ingredients (flour through cinnamon). Press into the prepared pan and bake 15-18 minutes or until lightly browned then cool crust (you can place in the refrigerator).
3. Apples: While the crust is baking and cooling, add all of the Apple Layer ingredients to a large bowl and toss to evenly combine. Set aside.
4. Toffee and Pecans: Top cooled crust with 1 cup prepared caramel sauce then sprinkle with 1/3 cup toffee bits and 1/2 cup chopped pecans. Refrigerate remaining caramel. Evenly layer apple slices over caramel/toffee/pecan layer.
5. Cheesecake: Beat cream cheese and 1/2 cup sugar on medium speed for 3-5 minutes until light and fluffy. Beat in egg until incorporated, then add sour cream, lemon juice and vanilla and mix until well incorporated. Pour over apple layer and spread evenly.
6. Streusel: In a medium bowl, mix together flour, brown sugar and oats. Cut in butter until crumbly. Stir in pecans and toffee bits. Sprinkle over cheesecake layer.
7. Bake at 350F degrees for 25-30 minutes or until filling is set. Let bars cool in pan on a wire rack for 1 hour then refrigerate for at least 2 hours. Optional: Caramel can be drizzled on bars before they are placed in the refrigerator OR can be heated in the microwave and drizzled over before serving.
8. To cut, easily remove the cheesecake bars from the pan by lifting out the parchment paper.
